Description

This roasted red pepper, spinach, and mozzarella stuffed chicken is a perfect blend of juicy chicken breast, sweet roasted peppers, earthy spinach, and creamy mozzarella. A healthy yet indulgent dish that’s ideal for a family dinner or special occasion!

 


Ingredients

  • 4 large chicken breasts
  • 1 cup roasted red peppers, sliced
  • 2 cups fresh spinach
  • 1 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • Prepare the Chicken: Slice each chicken breast horizontally to create a pocket without cutting all the way through. Season both sides with salt, pepper, garlic powder, and Italian seasoning.
  • Cook the Filling: In a skillet over medium heat, add 1 tbsp olive oil and sauté garlic until fragrant. Add spinach and roasted red peppers, cooking until the spinach wilts. Remove from heat.
  • Stuff the Chicken: Stuff each chicken breast with the spinach and pepper mixture, followed by shredded mozzarella cheese. Secure with toothpicks if necessary.
  • Sear the Chicken: Heat the remaining olive oil in a skillet and sear the stuffed chicken breasts for 2-3 minutes per side until golden.
  • Bake: Transfer the chicken to a baking dish and bake at 375°F (190°C) for 20-25 minutes, or until the chicken is fully cooked and the cheese is melted.
  • Serve: Remove toothpicks and let rest for a few minutes before serving.

Notes

1️⃣ Secure the Chicken Properly: Use toothpicks or kitchen twine to keep the stuffed chicken breasts closed while cooking. This prevents the filling from spilling out and ensures even cooking.

2️⃣ Don’t Overcook the Chicken: Use a meat thermometer to check for doneness. The internal temperature should reach 165°F (74°C) to keep the chicken moist and juicy.

3️⃣ Rest Before Serving: Let the chicken rest for 5 minutes after cooking. This helps the juices redistribute, keeping the meat tender and flavorful.
