This roasted red pepper, spinach, and mozzarella stuffed chicken is a perfect blend of juicy chicken breast, sweet roasted peppers, earthy spinach, and creamy mozzarella. A healthy yet indulgent dish that’s ideal for a family dinner or special occasion!
Ingredients
- 4 large chicken breasts
- 1 cup roasted red peppers, sliced
- 2 cups fresh spinach
- 1 cup mozzarella cheese, shredded
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Prepare the Chicken: Slice each chicken breast horizontally to create a pocket without cutting all the way through. Season both sides with salt, pepper, garlic powder, and Italian seasoning.
- Cook the Filling: In a skillet over medium heat, add 1 tbsp olive oil and sauté garlic until fragrant. Add spinach and roasted red peppers, cooking until the spinach wilts. Remove from heat.
- Stuff the Chicken: Stuff each chicken breast with the spinach and pepper mixture, followed by shredded mozzarella cheese. Secure with toothpicks if necessary.
- Sear the Chicken: Heat the remaining olive oil in a skillet and sear the stuffed chicken breasts for 2-3 minutes per side until golden.
- Bake: Transfer the chicken to a baking dish and bake at 375°F (190°C) for 20-25 minutes, or until the chicken is fully cooked and the cheese is melted.
- Serve: Remove toothpicks and let rest for a few minutes before serving.
