Description

Roasted Red Pepper Spinach and Mozzarella Stuffed Chicken is a healthy and flavorful entrée that turns a simple chicken breast into a stunning, nutrient-packed dish. Filled with creamy mozzarella, vibrant spinach, and sweet roasted red peppers, it’s easy enough for weeknights yet elegant enough for special occasions.


Ingredients

  • 4 boneless, skinless chicken breasts

  • 2 roasted red peppers (jarred or homemade), sliced

  • 2 cups fresh spinach (or 1 cup thawed, drained frozen spinach)

  • 1 cup shredded or sliced mozzarella cheese

  • 2 tbsp olive oil (plus more for cooking)

  • 2 cloves garlic, minced

  • Salt and black pepper, to taste

  • Toothpicks (to secure rolls)


Instructions

  1. Prep Ingredients: Wash spinach and pat dry. Slice roasted red peppers and mozzarella.

  2. Cook Spinach: Heat olive oil in a pan, sauté spinach with garlic until wilted. Set aside.

  3. Flatten Chicken: Slice chicken breasts open like a book and gently pound to flatten. Season both sides with salt and pepper.

  4. Stuff Chicken: Layer spinach, red pepper, and mozzarella inside each chicken breast. Roll and secure with toothpicks.

  5. Sear Chicken: Heat oil in a large skillet. Sear each chicken roll for 3–4 minutes per side until golden.

  6. Bake: Transfer to a baking dish and bake at 180°C (350°F) for 20–25 minutes or until internal temp reaches 75°C (165°F).

  7. Rest & Serve: Let chicken rest 5 minutes before slicing. Serve with your favorite sides.
