Description
Fresh rhubarb is roasted and blended into a sweet and tangy barbecue sauce with classic flavors.
Ingredients
Scale
- 4 cups coarsely chopped rhubarb
- 3 cloves garlic
- 1 cup water plus more as needed
- 3 tablespoons balsamic vinegar
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon chili powder
- 1/4 teaspoon cinnamon
- Dash of cayenne pepper
- Salt and black pepper to taste
Instructions
- Preheat oven to 425°F and prepare a lined baking sheet
- Roast rhubarb and garlic for 15 to 20 minutes until soft
- Blend roasted mixture with water until smooth
- Transfer puree to saucepan and add remaining ingredients
- Simmer over medium-low heat for 10 to 15 minutes
- Adjust consistency with water as needed
- Cool and store in containers

- Adjust cayenne for spice level
- Add water gradually for desired consistency
