Description

Fresh rhubarb is roasted and blended into a sweet and tangy barbecue sauce with classic flavors.


Ingredients

Scale
  • 4 cups coarsely chopped rhubarb
  • 3 cloves garlic
  • 1 cup water plus more as needed
  • 3 tablespoons balsamic vinegar
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon chili powder
  • 1/4 teaspoon cinnamon
  • Dash of cayenne pepper
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 425°F and prepare a lined baking sheet
  2. Roast rhubarb and garlic for 15 to 20 minutes until soft
  3. Blend roasted mixture with water until smooth
  4. Transfer puree to saucepan and add remaining ingredients
  5. Simmer over medium-low heat for 10 to 15 minutes
  6. Adjust consistency with water as needed
  7. Cool and store in containers

  1. Adjust cayenne for spice level
  2. Add water gradually for desired consistency
  3. Store refrigerated for up to one week
