Description

These bite-sized treats combine fudgy brownies with gooey marshmallows, crunchy nuts, and rich chocolate chunks. Perfect for any occasion, they’re a delightful mix of textures and flavors that everyone will love!


Ingredients

  • Brownie Base:
    • 1 cup (125g) all-purpose flour
    • ½ cup (50g) unsweetened cocoa powder
    • ¾ cup (150g) granulated sugar
    • ½ cup (100g) brown sugar
    • ½ teaspoon salt
    • ½ teaspoon baking powder
    • 2 large eggs
    • ½ cup (115g) unsalted butter, melted
    • 1 teaspoon vanilla extract
  • Rocky Road Toppings:
    • ¾ cup (120g) semi-sweet chocolate chips
    • 1 cup (50g) mini marshmallows
    • ½ cup (60g) chopped walnuts or almonds

Instructions

  • Prepare the Oven & Pan: Preheat the oven to 350°F (175°C). Line a mini muffin tin or an 8-inch (20cm) square baking pan with parchment paper.
  • Mix Dry Ingredients: In a bowl, whisk together flour, cocoa powder, sugars, salt, and baking powder.
  • Combine Wet Ingredients: In another bowl, whisk eggs, melted butter, and vanilla until smooth. Gradually mix in the dry ingredients until fully combined.
  • Bake the Brownies: Pour the batter into the prepared pan. Bake for 18-22 minutes or until a toothpick inserted in the center comes out with moist crumbs.
  • Add the Toppings: Immediately sprinkle marshmallows, chocolate chips, and nuts on top. Gently press them into the brownies.
  • Melt the Toppings: Return the brownies to the oven for 3-5 minutes, until the marshmallows puff up and the chocolate melts.
  • Cool & Cut: Let the brownies cool completely before cutting them into bite-sized pieces. For an extra touch, drizzle with melted chocolate!
