- Brownie Base:
- 1 cup (125g) all-purpose flour
- ½ cup (50g) unsweetened cocoa powder
- ¾ cup (150g) granulated sugar
- ½ cup (100g) brown sugar
- ½ teaspoon salt
- ½ teaspoon baking powder
- 2 large eggs
- ½ cup (115g) unsalted butter, melted
- 1 teaspoon vanilla extract
- Rocky Road Toppings:
- ¾ cup (120g) semi-sweet chocolate chips
- 1 cup (50g) mini marshmallows
- ½ cup (60g) chopped walnuts or almonds
Instructions
- Prepare the Oven & Pan: Preheat the oven to 350°F (175°C). Line a mini muffin tin or an 8-inch (20cm) square baking pan with parchment paper.
- Mix Dry Ingredients: In a bowl, whisk together flour, cocoa powder, sugars, salt, and baking powder.
- Combine Wet Ingredients: In another bowl, whisk eggs, melted butter, and vanilla until smooth. Gradually mix in the dry ingredients until fully combined.
- Bake the Brownies: Pour the batter into the prepared pan. Bake for 18-22 minutes or until a toothpick inserted in the center comes out with moist crumbs.
- Add the Toppings: Immediately sprinkle marshmallows, chocolate chips, and nuts on top. Gently press them into the brownies.
- Melt the Toppings: Return the brownies to the oven for 3-5 minutes, until the marshmallows puff up and the chocolate melts.
- Cool & Cut: Let the brownies cool completely before cutting them into bite-sized pieces. For an extra touch, drizzle with melted chocolate!
