Description
Rustic Cherry Tarts make the most of fresh summer cherries with a flaky homemade crust and juicy fruit filling.
Ingredients

- 1 1/2 cups all-purpose flour
- 3/4 teaspoon salt
- 2 tablespoons sugar
- 1/2 cup shortening
- 1/4 cup ice-cold water
- 4 cups pitted sweet cherries
- 3 tablespoons sugar
- 1 1/2 teaspoons cornstarch
- 1 egg, beaten
Instructions
- Mix flour, salt, and sugar in a medium bowl.
- Cut shortening into the flour mixture until pea-sized crumbs form.
- Sprinkle cold water over the mixture and stir lightly with a fork until dough forms.
- Chill the dough for at least 1 hour.
- Preheat oven to 400 degrees F.
- Mix cherries with sugar and cornstarch.
- Divide dough into 4 portions and roll each into an 8-inch circle.
- Place 1 cup of cherry filling in the center of each dough round.
- Fold crust edges over the cherries, pleating gently.
- Brush crust with beaten egg.
- Bake for 25 to 30 minutes until golden brown and bubbly.
Notes
- Keep the dough cold for the flakiest crust.
- Serve warm with vanilla ice cream if desired.
- Store leftovers in an airtight container for up to 4 days.
