Ingredients

    500 g salmon, cut into 1 1/2-inch cubes2 tablespoons extra virgin olive oil1 teaspoon Dijon mustard or hot mustard1/2 teaspoon red wine vinegarGood pinch of saltGood pinch of black pepper1 teaspoon dill1/4 cup coconut yogurt or Greek yogurt1/2 teaspoon lemon juice1 teaspoon olive oilPinch of saltPinch of black pepper

Instructions

    Cut the salmon into 1 1/2-inch cubes.Mix 2 tablespoons extra virgin olive oil, Dijon mustard, red wine vinegar, salt, and black pepper in a small bowl.Toss the salmon with half of the mustard dressing and reserve the remaining dressing for serving.Preheat the air fryer to 400°F or 200°C and lightly spray the basket with oil or line it with suitable greaseproof paper.Arrange the salmon pieces in the basket, skin side down if using skin-on salmon, leaving space between the pieces.Air fry for 7 to 8 minutes until the salmon reaches your preferred doneness and develops lightly crisp edges.Mix the dill, yogurt, lemon juice, 1 teaspoon olive oil, salt, and black pepper in a small bowl until creamy.Transfer the cooked salmon bites to a serving plate and drizzle with the reserved mustard dressing.Serve immediately with the dill yogurt dipping sauce and, if desired, rice, salad, or roasted vegetables.

Notes

    Cut the salmon into evenly sized cubes so the pieces cook at a similar rate.Do not overcrowd the air fryer basket because space around each piece helps the edges crisp.Check smaller salmon cubes before the full 8 minutes because they may cook faster.Reserve half of the dressing before it touches the raw salmon so it stays suitable for serving.Greek yogurt makes a thick creamy dipping sauce, while coconut yogurt offers a dairy-free alternative.Serve the salmon bites immediately for the best crisp-edged texture.
