Description

Golden, chewy, and packed with rich espresso flavor, these Salted Espresso Chocolate Chunk Blondies are the ultimate sweet-and-salty treat. Topped with a sprinkle of sea salt, every bite is a perfect balance of bold espresso and gooey chocolate chunks.

 


Ingredients

  • 1 cup (225g) unsalted butter, melted
  • 1 cup (200g) brown sugar, packed
  • ½ cup (100g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tbsp espresso powder
  • 1 ½ cups (250g) dark chocolate chunks
  • Flaky sea salt, for topping

Instructions

  • Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  • In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth and combined.
  • Add the eggs and vanilla extract to the sugar mixture, whisking until fully incorporated.
  • In a separate bowl, sift together the flour, baking powder, baking soda, salt, and espresso powder.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.
  • Fold in the chocolate chunks, distributing them evenly throughout the batter.
  • Pour the batter into the prepared pan, spreading it out evenly. Sprinkle the top with flaky sea salt.
  • Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  • Remove from the oven and let the blondies cool completely in the pan before lifting them out using the parchment paper overhang.
  • Slice into squares and enjoy!
