- 1 cup (225g) unsalted butter, melted
- 1 cup (200g) brown sugar, packed
- ½ cup (100g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tbsp espresso powder
- 1 ½ cups (250g) dark chocolate chunks
- Flaky sea salt, for topping
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth and combined.
- Add the eggs and vanilla extract to the sugar mixture, whisking until fully incorporated.
- In a separate bowl, sift together the flour, baking powder, baking soda, salt, and espresso powder.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.
- Fold in the chocolate chunks, distributing them evenly throughout the batter.
- Pour the batter into the prepared pan, spreading it out evenly. Sprinkle the top with flaky sea salt.
- Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
- Remove from the oven and let the blondies cool completely in the pan before lifting them out using the parchment paper overhang.
- Slice into squares and enjoy!
