- 2 tablespoons milk
- Gel food coloring (pink, yellow, green, blue, purple)
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- 2 tablespoons heavy cream or milk
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Beat butter and sugar until light and fluffy.
- Add egg and vanilla and mix until combined.
- Whisk dry ingredients and add to dough with milk.
- Divide dough, tint with pastel colors, and roll into balls.
- Bake 8–10 minutes until edges are set and tops crack slightly.
- Cool cookies completely.
- Beat filling ingredients until fluffy.
- Sandwich cookies with vanilla filling and let set.
Notes
- Do not overbake to keep cookies soft.
- Use gel food coloring to avoid thinning the dough.
