Description

Soft pastel-colored sugar cookies sandwiched with a creamy vanilla filling. These sandwich sugar cookies are tender, colorful, and perfect for spring desserts or special occasions.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons milk
  • Gel food coloring (pink, yellow, green, blue, purple)
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Beat butter and sugar until light and fluffy.
  3. Add egg and vanilla and mix until combined.
  4. Whisk dry ingredients and add to dough with milk.
  5. Divide dough, tint with pastel colors, and roll into balls.
  6. Bake 8–10 minutes until edges are set and tops crack slightly.
  7. Cool cookies completely.
  8. Beat filling ingredients until fluffy.
  9. Sandwich cookies with vanilla filling and let set.

Notes

  1. Do not overbake to keep cookies soft.
  2. Use gel food coloring to avoid thinning the dough.
