Description
Santa Fe Chicken Packets are a quick and flavorful foil dinner made with chicken, black beans, corn, and salsa for an easy Southwest-inspired meal.
Ingredients

- 4 boneless skinless chicken breasts (7–8 ounces each)
- 1/2 teaspoon chili powder
- Salt and black pepper to taste
- 1 can (15 ounces) black beans drained and rinsed
- 2 cups frozen corn kernels thawed
- 1 cup diced bell peppers
- 3/4 cup salsa or Rotel diced tomatoes and green chilies drained
- 1/2 cup shredded Mexican cheese blend or Monterey Jack
- Optional toppings cilantro tomatoes jalapenos
Instructions
- Preheat grill to medium-high heat
- Place four large pieces of foil on work surface and spray with cooking spray
- Place one chicken breast on each foil and season with chili powder salt and pepper
- Divide beans corn peppers and salsa over each chicken breast
- Fold foil to seal packets tightly
- Place packets on grill vegetable side down and cook for 10 minutes
- Flip packets and cook another 10 to 12 minutes until chicken reaches 165°F
- Carefully open packets and top with cheese
- Return to grill until cheese melts
- Add desired toppings and serve
Notes
- Slice chicken and serve with tortillas if desired
- Do not overfill packets
- Seal foil tightly to keep juices inside
- Cook chicken to 165°F for safe results
