Description

Ingredients

  • 2 cups sauerkraut, drained and rinsed
  • 1 lb smoked sausage or kielbasa, sliced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1 cup shredded Swiss cheese
  • 1/2 cup breadcrumbs
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  • Cook the Sausage: In a skillet over medium heat, heat olive oil and sauté sliced sausage until browned. Remove and set aside.
  • Sauté Aromatics: In the same skillet, sauté onions and garlic until softened and translucent.
  • Combine Ingredients: In a large bowl, mix sauerkraut, cooked sausage, sautéed onions, garlic, sour cream, chicken broth, paprika, salt, and pepper. Stir well.
  • Assemble Casserole: Spread the mixture evenly in the prepared baking dish. Top with shredded Swiss cheese and breadcrumbs.
  • Bake: Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes or until golden and bubbly.
  • Serve: Let the casserole cool slightly before serving.

Notes

Drain and Rinse the Sauerkraut:

To avoid excess moisture and an overly salty dish, always drain and rinse the sauerkraut before adding it to the casserole. This step ensures a balanced flavor and proper texture.
