- 1 pound breakfast sausage
- 6 large eggs
- 1 cup milk
- 1 package (30 oz) frozen hash browns, thawed
- 2 cups shredded cheddar cheese
- 1 small onion, finely chopped (optional)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Instructions
- 1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- 2. Cook breakfast sausage in a large skillet over medium heat, breaking it apart as it cooks. Drain excess fat.
- 3. In a large bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper.
- 4. Add thawed hash browns, cooked sausage, and half of the shredded cheese to the egg mixture. Stir to combine.
- 5. Pour the mixture into the prepared baking dish and top with the remaining cheese.
- 6. Bake for 45–55 minutes or until the casserole is set in the middle and the top is golden brown.
- 7. Let the casserole rest for 10 minutes before slicing and serving.
Notes
- Make ahead: Assemble the casserole the night before and refrigerate overnight. Bake the next morning.
- Freezer-friendly: Freeze the unbaked casserole for up to 3 months. Thaw overnight in the fridge and bake as directed.
