Description

Perfect Grilled Zucchini is the ultimate summer side dish—healthy, flavorful, and ready in under 15 minutes. Brushed with olive oil, seasoned with Italian herbs and garlic, and finished with a touch of tangy balsamic vinegar, these grilled zucchini spears are light, elegant, and go with just about everything.

Ingredients

Scale
  • 2 zucchinis (about 300 g each), quartered lengthwise

  • 2 tsp olive oil

  • 1 tsp Italian seasoning

  • 1/2 tsp garlic powder

  • Pinch of salt

  • 2 tbsp balsamic vinegar

Instructions

  1. Preheat grill to medium-low (300°F / 150°C). Lightly oil the grate.

  2. Arrange zucchini on a tray. Brush with olive oil and sprinkle with Italian seasoning, garlic powder, and salt.

  3. Let rest 5 minutes to absorb seasoning.

  4. Grill flesh-side down for 3–4 minutes per side, until charred and golden.

  5. Brush with balsamic vinegar and grill 1 more minute to caramelize.

  6. Serve hot.

Notes

Use firm zucchinis for best texture.

Resting before grilling enhances flavor.

No outdoor grill? Use a grill pan on the stovetop.

Add extra balsamic before serving for more tang.

Delicious, topped with crumbled feta or in pasta salads.
