Slow Cooker Chicken Satay is a rich, creamy, and mildly spiced peanut butter chicken dish that’s perfect for busy weeknights. With tender chicken thighs, bold Thai-inspired flavors, and a fuss-free slow cooker method, it delivers a comforting, crowd-pleasing meal that practically makes itself.
Ingredients
1 kg boneless, skinless chicken thighs
3 tsp minced garlic
2 tsp grated fresh ginger
150 g crunchy peanut butter
2 tsp mild curry powder
3 tbsp honey
4 tbsp low-sodium soy sauce
2 red bell peppers, chopped
Juice of 1–2 limes
Instructions
Add chicken, garlic, ginger, peanut butter, curry powder, honey, and soy sauce to the slow cooker. Stir to coat evenly.
Cover and cook on low for 6+ hours or high for 4 hours, until the chicken is tender.
Add chopped red bell peppers 30 minutes before the end of cooking for a light crunch (or earlier for softer peppers).
Stir in the juice of one lime just before serving. Adjust to taste.
Serve with steamed rice, noodles, or a light salad.
Notes
Microwave thick peanut butter for easier mixing.
Swap chicken thighs for breasts if preferred.
Add extra veggies like carrots or snow peas during the final hour.
Garnish with chopped peanuts, cilantro, or chili flakes for added texture or spice.
Store in the fridge for up to 3 days or freeze for 2 months.
