Description

A festive, minty dessert inspired by the iconic Shamrock Shake, transformed into a creamy frozen pie perfect for celebrating St. Patrick’s Day. This no-bake treat combines cool mint flavor, fluffy whipped topping, and a graham cracker crust into a delightful green indulgence.

Ingredients

  • 1 pre-made graham cracker pie crust (or homemade equivalent)

  • 1 box (3.4 oz) instant vanilla pudding mix

  • 1 ½ cups milk (or almond/coconut milk for dairy-free)

  • ½ teaspoon pure mint extract

  • 1 to 2 drops green food coloring (optional)

  • 2 cups whipped topping (or dairy-free/vegan alternative)

  • Optional toppings: crushed mint candies, chocolate curls, whipped cream, chocolate syrup, fresh mint leaves

Instructions

  1. In a large bowl, whisk together the pudding mix and milk until thickened (about 2 minutes).

  2. Stir in the mint extract and green food coloring (if using), adjusting color gradually.

  3. Gently fold in the whipped topping until smooth and fully incorporated.

  4. Pour the mixture into the prepared graham cracker crust and smooth the top.

  5. Freeze for at least 6 hours or overnight until firm.

  6. Before serving, garnish with optional toppings like crushed mint candies, chocolate syrup, or whipped cream.

  7. For clean slices, dip a knife in hot water and wipe dry between cuts.

  8. Serve chilled and enjoy!

Notes

Start with a small amount of mint extract and adjust to taste.

Use pure mint extract for best flavor, not peppermint.

Pie can be made up to 2 days in advance and stored in the freezer.

For a gluten-free version, use gluten-free graham crackers for the crust.

Vegan and dairy-free variations are possible with suitable substitutes.
