Description

This Instant Pot Shredded Chicken is juicy, tender, and incredibly versatile. It’s a quick, no-fuss method for making a protein-packed ingredient you can use in everything from tacos and salads to soups and sandwiches. Perfect for busy weeknights or meal prepping!


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs

  • 1 cup chicken broth (or vegetable broth)

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • Optional: 1/2 teaspoon paprika or Italian seasoning for added flavor


Instructions

  1. Season the Chicken: Rub the chicken breasts or thighs with salt, pepper, garlic powder, and other optional spices.

  2. Add to Instant Pot: Place the seasoned chicken in the pot. Pour in 1 cup of broth.

  3. Pressure Cook: Seal the lid and set the valve to “Sealing.” Cook on high pressure for 10 minutes (for fresh chicken).

  4. Natural Release: Let pressure release naturally for 10 minutes, then manually release any remaining pressure.

  5. Shred the Chicken: Transfer the chicken to a plate or bowl and shred using two forks, meat claws, or a hand mixer.

  6. Moisten: Return shredded chicken to the pot and stir into the leftover juices to keep it moist and flavorful.

Notes

Use frozen chicken by increasing cook time to 12–15 minutes.

Store leftovers in the fridge for 4 days or freeze up to 6 months.

Toss shredded chicken with BBQ sauce, salsa, or curry for quick meal variations.

Add aromatics like bay leaves, onion, or ginger to the broth for deeper flavor.

Let shredded chicken sit in its juices for 5–10 minutes to boost moisture.
