- 2 cups whole milk (or heavy cream for extra richness)
- 4 egg yolks
- ½ cup granulated sugar
- 1 tablespoon cornstarch (optional, for extra thickness)
- 1 teaspoon pure vanilla extract
- A pinch of salt
Instructions
- Heat the Milk: In a saucepan over medium heat, warm the milk until it’s just about to boil. Remove from heat and set aside.
- Whisk the Eggs & Sugar: In a separate bowl, whisk together the egg yolks, sugar, cornstarch (if using), and salt until the mixture is pale and smooth.
- Temper the Eggs: Slowly pour a small amount of the warm milk into the egg mixture, whisking constantly to prevent curdling. Gradually add the rest of the milk.
- Cook the Custard: Return the mixture to the saucepan and cook over low heat, stirring continuously with a wooden spoon until thickened (about 5-7 minutes). The custard should coat the back of the spoon.
- Add Vanilla & Strain: Remove from heat, stir in vanilla extract, and strain through a fine sieve for a silky texture.
- Chill & Serve: Pour into serving dishes and chill for at least 2 hours before serving. Garnish with fruit, caramel, or whipped cream if desired.
