Description

Tender strips of beef and crisp broccoli cook in a savory garlic soy sauce for an easy slow cooker dinner the whole family can enjoy.


Ingredients

  • 1 1/2 pounds boneless beef chuck roast, cut into 1/4-inch strips
  • 1 cup low-sodium beef broth
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup packed dark brown sugar
  • 1 tablespoon sesame oil
  • 3 teaspoons minced garlic, about 3 cloves
  • 2 tablespoons cornstarch
  • 1 12-ounce bag frozen broccoli florets, about 3 cups
  • Cooked white rice, brown rice, or noodles, for serving
  • Sliced green onions, optional
  • Sesame seeds, optional

Instructions

  1. Whisk the beef broth, soy sauce, dark brown sugar, sesame oil, and minced garlic together in a medium bowl.
  2. Place the sliced chuck roast in a 4- to 7-quart slow cooker.
  3. Pour the prepared sauce over the beef and toss gently until every strip is coated.
  4. Cover and cook on LOW for 2 1/2 to 3 1/2 hours, checking the beef at the shorter cooking time.
  5. About one hour before the beef finishes, remove 1/4 cup of hot cooking liquid and place it in a small bowl.
  6. Add the cornstarch to the reserved liquid and whisk until completely smooth.
  7. Slowly stir the cornstarch mixture back into the slow cooker, then cover and continue cooking.
  8. Add the frozen broccoli during the final 30 minutes and stir gently to incorporate.
  9. Cover and cook until the broccoli becomes hot and crisp-tender.
  10. Serve over cooked rice or noodles and garnish with green onions and sesame seeds if desired.

Notes

  1. Slice the beef thinly across the grain for a tender texture.
  2. Partially thaw the broccoli or add it 45 to 60 minutes before serving when you prefer softer florets.
  3. For deeper flavor, brown the beef strips in a hot skillet before adding them to the slow cooker.
  4. Use low-sodium broth and soy sauce to keep the finished sauce from becoming overly salty.
  5. Store leftovers in an airtight container in the refrigerator for up to 5 days.
  6. Freeze cooled leftovers for up to 3 months and thaw overnight in the refrigerator before reheating.
  7. Reheat gently on the stove over medium-low heat with a splash of broth or water.
