Main Ingredients:

  • 2 lbs chuck roast or stewing beef, cut into chunks

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 8 oz mushrooms, sliced

  • 2 cups beef broth (low-sodium preferred)

  • 1 tbsp Dijon mustard

  • 1 tbsp Worcestershire sauce

  • 1 tsp paprika

  • Salt and black pepper to taste

Creamy Finish:

  • ¾ cup sour cream (add at the end)

  • 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)

Optional Add-ins:

  • ½ cup cream cheese (for extra creaminess)

  • 1 cup carrots or peas, chopped (optional veggies)

  • Fresh parsley or dill for garnish


Instructions

  1. Prepare the Ingredients:
    Cut the beef into small pieces. Season with salt and pepper. Optional: brown the meat in a pan for extra flavor.

  2. Assemble in Slow Cooker:
    Add beef, onions, garlic, and mushrooms to the slow cooker. Pour in beef broth, mustard, Worcestershire sauce, and paprika.

  3. Cook:
    Cover and cook on LOW for 7–8 hours or on HIGH for 4–5 hours, until beef is tender.

  4. Thicken Sauce (Optional):
    If needed, mix cornstarch with water and stir into the slow cooker. Cook for another 20–30 minutes until thickened.

  5. Add Sour Cream:
    Turn off the heat. Let the sauce cool slightly, then stir in sour cream (and cream cheese if using). Mix until smooth.

  6. Serve:
    Serve warm over cooked egg noodles, rice, or mashed potatoes. Garnish with fresh herbs.

Notes

Don’t add sour cream early—it can curdle.

Browning meat first adds deeper flavor but is optional.

Store leftovers in the fridge for up to 4 days, or freeze before adding dairy.

Can be made dairy-free with plant-based yogurt or cream.
