Rich, creamy, and full of flavor, this Slow Cooker Butter Chicken is an easy Indian-inspired dinner everyone will love.
Ingredients
2 lbs boneless skinless chicken thighs, cut into pieces
1 large onion, finely chopped
3 cloves garlic, minced
1 tbsp fresh ginger, minced
1 can tomato sauce (15 oz)
1 can coconut milk (14 oz)
½ cup plain Greek yogurt
¼ cup heavy cream
¼ cup unsalted butter
3 tbsp garam masala
1 tbsp curry powder
1 tbsp ground cumin
1 tbsp paprika
1 tsp turmeric
1 tsp chili powder
1 tsp salt
½ tsp black pepper
½ tsp cinnamon
¼ tsp cayenne pepper (optional)
Fresh cilantro for garnish
Cooked basmati rice
Naan bread
Instructions
1. Add onion, garlic, and ginger to the slow cooker.
2. Pour in tomato sauce, coconut milk, yogurt, and cream. Stir in all spices.
3. Add chicken pieces and stir to coat evenly.
4. Cover and cook on low 6–8 hours or high 3–4 hours.
5. Stir in butter 15 minutes before serving.
6. Serve with rice, garnish with cilantro, and enjoy!
Notes
Store leftovers in the fridge for up to 4 days or freeze for 3 months.
Add extra cream when reheating to restore creaminess.
