Description

A flavorful, low-effort slow cooker chicken dish that bursts with juicy cherry tomatoes, tangy balsamic, and fresh basil. This one-pot meal is perfect for busy nights, delivering comfort and taste with minimal cleanup.


Ingredients

  • 2 medium garlic cloves, minced or grated

  • 1.5 lb cherry tomatoes, halved (about 5 cups)

  • 4 tbsp balsamic vinegar

  • 4 tbsp extra virgin olive oil

  • 1 tsp kosher salt, divided

  • 2 lb boneless, skinless chicken breasts or thighs

  • 1/4 cup fresh basil, thinly sliced


Instructions

  • In a bowl, mix garlic, cherry tomatoes, balsamic vinegar, olive oil, and half the salt.

  • Add 2 cups of the tomato mixture to the bottom of a 6-quart slow cooker.

  • Season chicken with remaining salt and place on top. Spoon 1 more cup of tomato mix over the chicken.

  • Cover and cook on high for 3–4 hours or low for 5–6 hours, until chicken is tender.

  • Remove chicken, shred with forks, and return it to the slow cooker.

  • Discard half the liquid. Stir in the remaining tomato mixture and fresh basil. Warm through.

  • Taste and adjust seasoning if needed.

Notes

Use chicken thighs for extra juiciness.

Substitute fresh basil with 1 tsp dried basil or a bit of pesto if needed.

Leftovers freeze well and reheat best with a splash of broth.

Serve over rice, pasta, or in sandwiches.
