Description
A flavorful, low-effort slow cooker chicken dish that bursts with juicy cherry tomatoes, tangy balsamic, and fresh basil. This one-pot meal is perfect for busy nights, delivering comfort and taste with minimal cleanup.
Ingredients
2 medium garlic cloves, minced or grated
1.5 lb cherry tomatoes, halved (about 5 cups)
4 tbsp balsamic vinegar
4 tbsp extra virgin olive oil
1 tsp kosher salt, divided
2 lb boneless, skinless chicken breasts or thighs
1/4 cup fresh basil, thinly sliced
Instructions
In a bowl, mix garlic, cherry tomatoes, balsamic vinegar, olive oil, and half the salt.
Add 2 cups of the tomato mixture to the bottom of a 6-quart slow cooker.
Season chicken with remaining salt and place on top. Spoon 1 more cup of tomato mix over the chicken.
Cover and cook on high for 3–4 hours or low for 5–6 hours, until chicken is tender.
Remove chicken, shred with forks, and return it to the slow cooker.
Discard half the liquid. Stir in the remaining tomato mixture and fresh basil. Warm through.
Taste and adjust seasoning if needed.
Notes
Use chicken thighs for extra juiciness.
Substitute fresh basil with 1 tsp dried basil or a bit of pesto if needed.
Leftovers freeze well and reheat best with a splash of broth.
Serve over rice, pasta, or in sandwiches.
