Description

Slow Cooker Garlic Butter Beef Bites with Potatoes is a one-pot meal made with tender beef and buttery potatoes, flavored with garlic and simple seasonings.

Ingredients

  • Beef stew meat (2 lbs)
  • Baby Yukon Gold potatoes (2 cups)
  • Butter (1/2 cup)
  • Garlic, minced (5 cloves)
  • Garlic powder (1 tsp)
  • Onion powder (1 tsp)
  • Seasoned salt (1 tsp)
  • Beef broth (1/4 cup, optional)
  • Fresh parsley for garnish (1 tbsp)

Instructions

  1. Cut the beef into bite-sized pieces and wash the potatoes.
  2.  Add beef and potatoes to the slow cooker.
  3.  Add garlic, butter, garlic powder, onion powder, and seasoned salt.
  4.  Optionally, add 1/4 cup of beef broth for more moisture.
  5.  Stir well to coat the beef and potatoes with seasonings.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Stir again and garnish with fresh parsley before serving.

Notes

  1. For a richer gravy, add more broth and thicken with cornstarch. You can substitute Yukon Gold potatoes with red potatoes or russets for slight texture differences.
