- 2 pounds baby potatoes or Yukon Gold potatoes
- 1 packet Lipton onion soup mix
- 1 cup beef broth or chicken broth
- 1/4 cup unsalted butter, cut into pieces
- Salt to taste
- Black pepper to taste
- Fresh parsley, optional
Instructions
- Wash potatoes thoroughly and peel if desired.
- Place potatoes in the bottom of the slow cooker.
- Sprinkle onion soup mix evenly over the potatoes.
- Pour broth over the potatoes and dot with butter.
- Season with salt and pepper, cover, and cook on low 6 to 8 hours or high 3 to 4 hours.
- Check tenderness, garnish with parsley, and serve.
