Ingredients
2 lbs boneless, skinless chicken breasts or thighs
1 packet taco seasoning (or 2 tbsp homemade blend)
1 can diced tomatoes with green chiles (e.g., Rotel)
1½ cups queso dip (store-bought or homemade)
½ cup chicken broth (optional, for a thinner sauce)
Salt and pepper, to taste
8–10 flour or corn tortillas
Optional Add-ins & Toppings
1 cup canned black beans, drained
1 cup frozen corn
Shredded lettuce, avocado slices, salsa, chopped cilantro, sour cream, pickled onions, jalapeños
Fresh lime wedges, for serving
Instructions
Load the Slow Cooker
Place chicken in the bottom of the slow cooker. Sprinkle taco seasoning over the chicken.Add Veggies and Queso
Pour in diced tomatoes with green chiles (including liquid). If using beans and corn, add them now. Spread queso dip evenly over the chicken. Add chicken broth if you’d like a thinner sauce.Cook
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and fully cooked.Shred the Chicken
Shred the chicken directly in the slow cooker with two forks. Stir well to coat the chicken in the cheesy sauce.Assemble Tacos
Warm tortillas in a skillet or microwave. Fill with queso chicken mixture, then add your favorite toppings. Finish with a squeeze of lime.
Notes
Use chicken thighs for extra juiciness, but breasts work well too.
Add lime juice just before serving to brighten flavors.
To make it spicier, use jalapeño queso or add hot sauce.
For a thicker sauce, cook uncovered for the last 20 minutes.
