Description

Slow Cooker Queso Chicken Tacos are a mouthwatering blend of tender chicken breasts, seasoned to perfection with taco spices, and simmered in a creamy salsa con queso. Served in soft flour tortillas and garnished with your choice of shredded lettuce, diced tomatoes, and chopped cilantro, these tacos offer a comforting and flavorful meal that’s easy to prepare, making them perfect for any weeknight dinner or casual gathering.


Ingredients

  • 23 pounds boneless skinless chicken breasts (4 medium-sized chicken breasts)
  • 1 (1-ounce) package mild taco seasoning or use homemade taco seasoning
  • 1 (10-ounce) can mild diced tomatoes and green chilies, with juice
  • 1 (4-ounce) can diced green chiles
  • 1 teaspoon kosher salt
  • ½ teaspoon cracked black pepper
  • 1 (15-ounce) container salsa con queso
  • Street taco size flour tortillas
  • Shredded lettuce, sour cream, diced tomatoes, and chopped cilantro (optional garnish)

Instructions

  1. Lightly spray the inside of a 5-6 quart slow cooker with nonstick spray.
  2. Lay the chicken breasts in the bottom of the prepared slow cooker.
  3. Sprinkle the taco seasoning, kosher salt, and cracked black pepper over the chicken breasts.
  4. Pour the 10-ounce can of diced tomatoes and chiles and the 4-ounce can of green chiles over the seasoned chicken breasts. Cook on high for 4 hours.
  5. Once the chicken has finished cooking, use 2 forks to shred the chicken breasts.
  6. Pour the container of salsa con queso over the top of the chicken and stir to thoroughly combine.
  7. Serve in the flour tortillas, and garnish with shredded lettuce, tomatoes, chopped cilantro, and sour cream.

Notes

Use a slow cooker liner for easy cleanup.

Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 3 months.

Adjust spice level by choosing mild or hot salsa con queso and tomatoes.

Use gluten-free tortillas and seasoning for a gluten-free option.

Add beans or rice after cooking if desired.
