This slow cooker ranch chicken is a creamy, herb-packed one-pot dinner made with tender chicken, carrots, and potatoes, finished with a homemade ranch dressing. It’s cozy, easy, and family-approved—perfect for busy weeknights.
Ingredients
Ranch Seasoning:
16 g onion powder (2 tbsp)
0.8 g garlic powder (¼ tsp)
1 g dried dill (1 tsp)
5 g kosher salt (1 tsp)
Chicken & Veggies:
450 g yellow waxy potatoes, diced (3 cups)
450 g carrots, diced (3 cups)
60 ml chicken stock (¼ cup)
900 g boneless, skinless chicken breasts or thighs
1 tbsp Ranch Seasoning (divided)
2.5 g kosher salt (½ tsp)
Ranch Dressing:
80 ml whole Greek yogurt or non-dairy yogurt (⅓ cup)
15 ml avocado mayo (1 tbsp)
5 ml apple cider vinegar or lemon juice (1 tsp)
1 tbsp + 2 tsp Ranch Seasoning
Instructions
Mix ranch seasoning: onion powder, garlic powder, dill, salt.
Place diced potatoes and carrots in the slow cooker. Pour in chicken stock and toss with ½ tbsp of ranch seasoning.
Lay chicken on top. Season with remaining ranch seasoning and extra salt.
Cook on high for 3 hours or low for 6 hours, until chicken is tender.
Mix yogurt, mayo, vinegar/lemon juice, and ranch seasoning to make the dressing.
Slice chicken and serve with veggies. Drizzle or dip with ranch dressing.
Notes
Chicken thighs yield extra juiciness.
Add green beans or zucchini in the final hour for more veggies.
Double the ranch mix to keep for future use.
For a golden touch, broil chicken briefly before serving.
