Description

Creamy slow cooker chicken simmered in a tomato basil sauce with simple pantry ingredients.


Ingredients

Scale
  • 1 can diced tomatoes with Italian herbs (14 oz)
  • 1 cup marinara sauce
  • 3 cloves garlic, finely minced
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy whipping cream
  • 2 tablespoons cornstarch
  • 4 boneless skinless chicken breasts (about 2 pounds)
  • 2 tablespoons fresh basil, finely chopped
  • Grated Parmesan cheese, for serving

Instructions

  1. Add diced tomatoes, marinara sauce, garlic, salt, Italian seasoning, dried basil, and pepper to the slow cooker and stir
  2. Whisk heavy cream and cornstarch together until smooth and add to the slow cooker
  3. Add chicken breasts and press them down into the sauce
  4. Cook on low for 3 to 4 hours until chicken reaches an internal temperature of 165°F
  5. Stir in fresh basil, adjust seasoning if needed, and serve with Parmesan cheese

Notes

  1. Chicken thighs can be used instead of chicken breasts
  2. Do not substitute regular milk for heavy cream as it may curdle
  3. Serve over pasta, rice, or vegetables to use the extra sauce
