- 3 medium potatoes, peeled and diced
- 1 cup green beans, chopped
- 2 bay leaves
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/4 cups corn kernels
- 1/3 cup chopped fresh parsley
Instructions
- Heat olive oil in a skillet over medium-high heat. Add onion, carrots, and celery; cook 4 minutes. Stir in garlic and cook 30 seconds. Transfer to slow cooker.
- Add diced tomatoes, potatoes, and green beans to the slow cooker.
- Pour in vegetable broth and add thyme, salt, pepper, and bay leaves.
- Cover and cook on high for 4 hours or low for 6 to 8 hours.
- Add corn during the last hour of cooking.
- Remove bay leaves, adjust seasoning, garnish with parsley, and serve.
