Ingredients
Scale
- 1 cup mayonnaise
- 4 tablespoons pickle relish
- 2 tablespoons Dijon mustard
- 1 teaspoon sugar
- 1/2 tablespoon white vinegar
- 1 1/4 teaspoons paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 4 flour tortillas, 6 inches each
- 1 pound lean ground beef
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon neutral oil, such as vegetable, canola, or avocado oil
- 4 slices American cheese
- 1 small onion, diced
- Dill pickle chips, to taste
- Shredded iceberg lettuce, to taste
Instructions
- Add mayonnaise, pickle relish, Dijon mustard, sugar, white vinegar, paprika, onion powder, and garlic powder to a medium bowl, then stir until smooth and combined.
- Refrigerate the burger sauce for 30 to 60 minutes for the best flavor.
- Divide the ground beef into 4 equal portions.
- Place one tortilla on a clean work surface and spread one portion of ground beef evenly over the entire tortilla surface.
- Season the beef side generously with salt and black pepper.
- Repeat with the remaining tortillas and beef.
- Heat a skillet or griddle over medium-high heat and lightly coat the surface with neutral oil.
- Place one tortilla beef-side down onto the hot surface and press gently with a spatula for a few seconds.
- Cook for 2 to 3 minutes, until the beef forms a golden-brown crust.
- Flip the taco and immediately top the beef with one slice of American cheese.
- Cook for 1 to 3 minutes more, until the cheese melts and the tortilla turns lightly crisp.
- Remove from the heat and repeat with the remaining tacos.
- Top each taco with burger sauce, shredded lettuce, diced onion, and dill pickle chips.
- Fold gently and serve immediately.
Notes
- The burger sauce tastes best when made 30 to 60 minutes ahead.
- The sauce can be made one day in advance and stored in the refrigerator.
- Use 6-inch fajita-size flour tortillas for this recipe.
- Street taco-size tortillas may be used to make about 8 smaller tacos.
- Adjust the amount of beef when using smaller tortillas.
- The burger sauce may be replaced with ketchup, mustard, mayonnaise, or your favorite burger condiments.
- A griddle works best because several tacos can cook at the same time.
- Depending on skillet size, cook 1 to 2 tacos at a time.
- Store leftover sauce in the refrigerator for up to 5 days.
- The sauce recipe makes a generous amount and may be cut in half.
- American cheese gives a classic burger flavor, but cheddar, pepper jack, or Colby Jack may be used.
