Description

Smoked Gouda Broccoli Soup is a rich and creamy one-pot comfort food made with fresh broccoli, grated carrot, whole milk, and smoky Gouda cheese. It comes together on the stovetop in just 30 minutes.


Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 16 ounces vegetable or chicken broth
  • 16 ounces whole milk
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • 1 large head broccoli, chopped into small florets
  • 1 large carrot, grated
  • 8 ounces smoked Gouda, freshly grated
  • Croutons for serving, optional

Instructions

  1. Melt the butter in a saucepan over medium heat.
  2. Add the diced onion and cook for about 4 minutes, stirring occasionally, until it begins to brown and turns translucent.
  3. Add the minced garlic and cook for 30 seconds, stirring constantly.
  4. Add the flour and stir until a thick paste forms, then cook for 1 minute.
  5. Gradually pour in the broth and whole milk while whisking until smooth.
  6. Add the salt, paprika, and black pepper, then whisk to combine.
  7. Stir in the broccoli florets and grated carrot.
  8. Bring the soup to a gentle simmer, cover the saucepan, reduce the heat to low, and cook for 10 to 12 minutes, or until the vegetables reach your preferred tenderness.
  9. Remove the saucepan from the heat.
  10. Slowly add the freshly grated smoked Gouda, stirring after each addition until completely melted and smooth.
  11. Serve warm with croutons, if desired.

Notes

  1. Store leftovers in a tightly sealed container in the refrigerator for 3 to 4 days.
  2. Reheat the soup in the microwave in short intervals, stirring between each interval, or warm it on the stovetop over medium-low heat.
  3. Do not bring the soup to a hard boil while reheating because high heat may cause the dairy and cheese to separate.
  4. Smoked Gouda can be replaced with cheddar, Monterey Jack, Gruyère, or regular Gouda.
  5. Use freshly grated cheese rather than pre-shredded cheese because anti-clumping coatings can create a grainy texture.
  6. If the soup becomes too thick after refrigeration, stir in a small amount of milk or broth while reheating.
