Description
A warm, comforting meal that combines tender chicken, creamy spinach, crispy bacon, and earthy mushrooms. This rich, flavorful dish is perfect for a cozy family dinner or to impress your guests.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach
- 6 slices bacon, chopped
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp butter
- 1/2 tsp paprika
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Prepare the Chicken: Season chicken breasts with salt, pepper, and paprika. Heat olive oil in a skillet over medium-high heat and sear chicken on both sides until golden and cooked through. Remove and set aside.
- Cook the Bacon: In the same skillet, cook chopped bacon until crispy. Remove and set aside, leaving the bacon grease in the pan.
- Sauté Vegetables: Add butter to the skillet. Sauté onions, garlic, and mushrooms until soft and fragrant.
- Make the Sauce: Pour heavy cream into the skillet, stirring well. Add spinach and let it wilt into the sauce. Simmer until thickened.
- Combine: Return the chicken to the skillet, spooning the sauce over each piece. Sprinkle crispy bacon on top. Simmer for 5 minutes to combine flavors.
- Serve: Garnish with fresh parsley and serve hot with mashed potatoes, rice, or crusty bread.
Notes
1️⃣ Avoid Overcooking the Chicken: To keep the chicken juicy and tender, sear it until golden on both sides and finish cooking it gently in the creamy sauce. Overcooking can make it dry and tough.
2️⃣ Balance the Sauce: Let the cream sauce simmer gently to thicken—don’t boil it, as this can cause the cream to curdle. Stir frequently for a smooth, velvety texture.
3️⃣ Use Fresh Ingredients: Fresh spinach, quality mushrooms, and crispy bacon elevate the dish’s flavors and textures. If using frozen spinach, ensure it’s well-drained to avoid a watery sauce.
