Description

Soft and chewy apple oatmeal bars made with applesauce, peanut butter, and rolled oats. These easy flourless bars are perfect for breakfast, snack time, or a light healthy dessert.


Ingredients

  • 1 cup unsweetened applesauce
  • 6 tablespoons unsweetened natural peanut butter
  • 2 cups rolled oats
  • Optional: 1 to 2 tablespoons honey
  • Optional: 1/2 teaspoon cinnamon
  • Optional: 1/3 cup chocolate chips, dried fruit, or chopped nuts

Instructions

  1. Preheat oven to 350°F. Line an 8-inch by 8-inch baking pan with parchment paper.
  2. Add applesauce and peanut butter to a large mixing bowl. Stir until fully combined and uniform in color.
  3. Add rolled oats and stir until evenly mixed. Fold in honey, cinnamon, chocolate chips, dried fruit, or nuts if using.
  4. Spoon the mixture into the prepared baking pan. Use a spatula to spread it evenly and smooth the surface.
  5. Bake for 13 to 15 minutes, or until the bars look set and cooked through.
  6. Let the bars cool completely in the pan before lifting them out with the parchment paper.
  7. Cut into 12 bars and serve, or store in an airtight container in the refrigerator or freezer.

Notes

  1. These bars have a mild sweetness. Add 1 to 2 tablespoons honey if you prefer a sweeter bar.
  2. Rolled oats are also called old-fashioned oats.
  3. Use certified gluten-free rolled oats if you need gluten-free bars.
  4. Let the bars cool fully before slicing so they hold together well.
  5. Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months.
