Ingredients
For the Soup Dumplings:
- 2 cups all-purpose flour
- 3/4 cup water
- 1/2 tsp salt
- 1/2 lb ground pork (or preferred protein)
- 1/4 cup chicken stock (gelatinized)
- 1 tbsp grated ginger
- 1 tbsp soy sauce
- 1 tsp sugar
For the Thai Red Curry Sauce:
- 2 tbsp red curry paste
- 1 can (14 oz) coconut milk
- 1 tbsp fish sauce (optional)
- 1 tbsp lime juice
- 1 tbsp sugar
- 1/4 cup water
- Fresh basil leaves for garnish
Instructions
- Prepare the Dough:
Mix flour and salt in a bowl. Gradually add water, stirring to form a dough. Knead for 5–7 minutes until smooth. Cover with a damp cloth; let rest for 30 minutes. - Make the Filling:
In a separate bowl, mix ground pork, chicken stock, soy sauce, ginger, and sugar into a paste. Set aside. - Prepare Thai Red Curry Sauce:
In a saucepan, combine red curry paste, coconut milk, fish sauce, lime juice, sugar, and water. Simmer over medium heat for 5–7 minutes, stirring occasionally, until thickened. Adjust sweetness or tanginess as needed. - Assemble Dumplings:
Roll dough into small circles (3 inches in diameter). Place a spoonful of pork filling in the center of each circle. Fold edges and pinch to seal tightly, ensuring no leaks. - Steam Dumplings:
Arrange dumplings in a steamer lined with parchment paper. Steam over boiling water for 10–12 minutes until cooked through. - Plate and Serve:
Place steamed dumplings on a serving plate. Drizzle generously with warm Thai red curry sauce. Garnish with fresh basil leaves. Serve immediately and enjoy!
