Description

This comforting sour cream beef noodle casserole is a perfect blend of savory ground beef, creamy sour cream, and tender egg noodles, all topped with gooey melted cheese. A satisfying dish for busy weeknights!

 


Ingredients

  • 12 oz egg noodles
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 ½ cups shredded cheddar cheese
  • 1 tbsp butter

Instructions

  • Cook the Noodles: Bring a large pot of salted water to a boil and cook egg noodles until al dente. Drain and toss with butter to prevent sticking.
  • Prepare the Beef Mixture: In a large skillet over medium heat, cook the ground beef with diced onions and garlic until browned. Drain excess fat. Stir in tomato sauce, Italian seasoning, salt, and pepper. Let it simmer for 5 minutes.
  • Mix the Dairy: In a bowl, combine sour cream and cottage cheese. Stir well to create a creamy mixture.
  • Assemble the Casserole: In a greased 9×13-inch baking dish, layer half of the cooked noodles, followed by half of the sour cream mixture and half of the beef mixture. Repeat the layers.
  • Add Cheese & Bake: Sprinkle shredded cheddar cheese evenly over the top. Bake at 350°F (175°C) for 25 minutes or until the cheese is melted and bubbly.
  • Serve & Enjoy: Let the casserole rest for 5 minutes before serving. Enjoy this creamy, cheesy comfort meal!

Notes

1️⃣ Use Full-Fat Dairy for Creaminess – Full-fat sour cream and cottage cheese will give the casserole a richer, creamier texture. Low-fat versions work but may alter the flavor and consistency.

2️⃣ Don’t Overcook the Noodles – Cook the egg noodles just until al dente since they will continue to cook in the oven. Overcooked noodles can become mushy in the casserole.

3️⃣ Let It Rest Before Serving – After baking, allow the casserole to sit for about 5 minutes. This helps the layers set and makes serving easier without falling apart.
