Southern Chicken Fried Chicken features crispy breaded chicken breasts topped with creamy homemade gravy for a comforting Southern-style dinner.

- 6–8 thin sliced chicken breasts
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 1/2 cups buttermilk
- 1 egg
- 1 tablespoon hot sauce
- Oil for frying
- 1/4 cup reserved frying oil
- 1/3 cup all-purpose flour (for gravy)
- 2 cups milk
- Salt and pepper to taste
Instructions
- Heat oil in deep fryer or large skillet to 325°F.
- Whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder in a large bowl.
- In another bowl whisk together buttermilk, egg, and hot sauce.
- Dredge chicken in flour mixture, dip into buttermilk mixture, then return to flour mixture pressing firmly to coat.
- Fry chicken 3-5 minutes per side until golden brown and cooked through.
- Remove and drain on paper towels.
- In a skillet add 1/4 cup reserved oil and heat over medium-high.
- Stir in flour and cook for 1 minute.
- Slowly whisk in milk until smooth and thickened.
- Season gravy with salt and pepper.
- Serve gravy poured over chicken.
Notes
- Use a deep fryer if preferred instead of skillet frying.
- Substitute butter or bacon grease for frying oil in the gravy if desired.
- Slice regular chicken breasts in half if thin sliced are unavailable.
- Adjust seasoning in flour and gravy to taste.
