Ingredients

Instructions
- Preheat oven to 350°F and grease 3 mini loaf pans or 1 large loaf pan.
- Combine peaches, oil, sugar, eggs, sour cream, and vanilla extract until blended.
- Stir in flour, baking soda, and salt until just combined.
- Pour batter into prepared pan and spread evenly.
- Bake 25 to 30 minutes for mini loaves or 50 to 55 minutes for a large loaf until a toothpick comes out clean.
- Cool slightly before slicing and serving.
Notes
- Fresh or canned peaches work well.
- Drain canned peaches thoroughly before using.
- Do not overmix the batter.
- Store at room temperature for 3 days or refrigerate for 5 days.
