Description

Classic Southern Peach Jam made with ripe peaches, sugar, lemon juice, and vanilla for a sweet homemade preserve.


Ingredients

Scale
  • 4 pounds ripe peaches
  • 4 cups granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 packet fruit pectin (optional)

Instructions

  1. Sterilize jars and lids in boiling water for 10 minutes.
  2. Blanch peaches for 30 seconds and transfer to an ice bath.
  3. Peel, pit, and chop peaches.
  4. Mash peaches lightly.
  5. Combine peaches, sugar, and lemon juice in a large pot.
  6. Bring to a boil, then simmer while stirring frequently.
  7. Add pectin if using.
  8. Cook until the jam wrinkles on a chilled plate.
  9. Stir in vanilla extract.
  10. Ladle into sterilized jars and leave 1/4 inch headspace.
  11. Seal jars and process in a boiling water bath for 10 minutes.
  12. Cool completely before storing.
