Description
Classic Southern Peach Jam made with ripe peaches, sugar, lemon juice, and vanilla for a sweet homemade preserve.
Ingredients

- 4 pounds ripe peaches
- 4 cups granulated sugar
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1 packet fruit pectin (optional)
Instructions
- Sterilize jars and lids in boiling water for 10 minutes.
- Blanch peaches for 30 seconds and transfer to an ice bath.
- Peel, pit, and chop peaches.
- Mash peaches lightly.
- Combine peaches, sugar, and lemon juice in a large pot.
- Bring to a boil, then simmer while stirring frequently.
- Add pectin if using.
- Cook until the jam wrinkles on a chilled plate.
- Stir in vanilla extract.
- Ladle into sterilized jars and leave 1/4 inch headspace.
- Seal jars and process in a boiling water bath for 10 minutes.
- Cool completely before storing.
