Description

Southern Pineapple Cake is a moist, sweet, and tropical dessert made with crushed pineapple and topped with a rich cream cheese frosting. Perfect for gatherings, it’s simple to make, packed with flavor, and customizable for different tastes or diets.

For the Cake:

  • 2 cups all-purpose flour

  • 2 cups granulated sugar

  • 2 eggs

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 can (20 oz) crushed pineapple, undrained

For the Frosting:

  • 8 oz cream cheese, softened

  • 1/2 cup unsalted butter, softened

  • 23 cups powdered sugar (to taste)

  • 1 teaspoon vanilla extract

Optional toppings:

  • Chopped pecans

  • Toasted coconut flakes

  • Pineapple slices for garnish


Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a large bowl, mix flour, sugar, baking soda, and salt.

  3. In another bowl, lightly beat the eggs. Add in the crushed pineapple (including juice) and mix.

  4. Combine wet and dry ingredients. Stir until just mixed—do not overmix.

  5. Pour batter into a greased 9×13-inch baking pan.

  6. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

  7. Let cake cool completely before frosting.

  8. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until creamy.

  9. Spread frosting evenly over the cooled cake. Garnish with nuts, coconut, or fruit if desired.

Notes

Don’t drain the pineapple—its juice adds needed moisture.

You can add coconut flakes, cinnamon, or chopped nuts to the batter.

Make it gluten-free by using a GF flour blend.

For vegan version: use flax eggs and dairy-free cream cheese.
