Description
A hearty and indulgent dish that combines the rich flavors of Southern comfort food with a Tex-Mex twist. Perfect for breakfast, brunch, or whenever you need a warm, satisfying meal!
Ingredients
Scale
- 1 lb ground breakfast sausage
- 1 small onion, diced
- 1 jalapeño, diced (optional)
- 3 tbsp all-purpose flour
- 2 cups milk
- 6 large eggs
- 2 tbsp butter
- 2 cups tater tots, cooked
- 1 cup shredded cheddar cheese
- 1 cup shredded Pepper Jack cheese
- 6 fajita-size flour tortillas
Instructions
- Prepare the Sausage Gravy
- In a skillet, cook the ground sausage over medium heat until browned and crumbled. Add the diced onion and jalapeño, cooking until softened.
- Sprinkle the flour over the sausage mixture, stirring well. Gradually pour in the milk, stirring constantly until smooth and creamy. Simmer for 5 minutes, then set aside.
- Scramble the Eggs
- In another skillet, melt butter over medium heat. Beat the eggs and pour them into the skillet. Cook gently, stirring often, until soft and fluffy. Set aside.
- Assemble the Enchiladas
- Lay a tortilla flat and add a spoonful of the sausage mixture, scrambled eggs, and a handful of tater tots. Roll the tortilla tightly and place seam-side down in a greased baking dish. Repeat with remaining tortillas.
- Top with Gravy and Cheese
- Pour the sausage gravy evenly over the rolled enchiladas. Sprinkle cheddar and Pepper Jack cheese on top.
- Bake
- Preheat the oven to 350°F (175°C). Bake for 20 minutes or until the cheese is melted and bubbly. For an extra crispy top, broil for 2–3 minutes.
Serve hot, garnished with fresh herbs or sliced jalapeños for a spicy kick!
Notes
- Customize the Heat: If you prefer a milder dish, skip the jalapeños and use mild sausage. For extra spice, opt for hot sausage, add cayenne pepper to the gravy, or top with spicy salsa.
- Prep Ahead: Assemble the enchiladas a day in advance and refrigerate. This saves time on busy mornings. Bake fresh when ready to serve.
- Don’t Skip the Gravy: The sausage gravy is the star of this dish, tying all the flavors together. Stir constantly while cooking to avoid lumps and achieve a creamy consistency.
