Description
Classic Southern squash casserole with cheddar cheese, Parmesan cheese, sour cream, and a buttery cracker topping.
Ingredients

- 2 pounds yellow squash sliced 1/4 inch thick
- 1/4 cup butter
- 1/2 cup diced onion
- 1/2 teaspoon garlic powder
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup sour cream
- 1 large egg beaten
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup finely crushed butter crackers
Instructions
- Melt 1 tablespoon butter and saute onion for 7 to 8 minutes.
- Add squash and cook 10 to 12 minutes until soft.
- Drain squash and onion mixture in a towel-lined colander for at least 5 minutes.
- Mix squash, onion, garlic powder, salt, pepper, sour cream, egg, cheddar cheese, and 1/4 cup Parmesan.
- Melt remaining butter and combine with crackers and remaining Parmesan.
- Spread squash mixture into a 1.5-quart baking dish.
- Top with cracker mixture.
- Bake at 350 degrees Fahrenheit for 25 minutes.
- Rest several minutes before serving.
Notes
- Drain squash thoroughly for best texture.
- Use sharp cheddar for richer flavor.
- Add topping just before baking if preparing ahead.
