Ingredients
Cornbread Base:
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tbsp sugar
- 1 egg
- 3/4 cup milk
- 2 tbsp melted butter
Honey Butter Filling:
- 4 tbsp unsalted butter (softened)
- 2 tbsp honey
- 1/2 tsp vanilla extract (optional)
Coating:
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan (optional)
Instructions
- Prepare the cornbread batter: In a bowl, mix cornmeal, flour, baking powder, salt, and sugar. In another bowl, whisk the egg, milk, and melted butter. Gradually combine wet and dry ingredients to form a smooth batter.
- Make the honey butter filling: Mix softened butter, honey, and vanilla extract until smooth. Chill for 10 minutes to firm up.
- Form the poppers: Take a spoonful of batter, shape it into a small ball, and create a pocket in the center. Add a small amount of honey butter filling, then seal the ball completely.
- Coat the poppers: Roll each ball in panko breadcrumbs (and Parmesan if using).
- Bake: Preheat oven to 375°F (190°C). Arrange poppers on a lined baking sheet and bake for 15-20 minutes until golden brown and crispy.
- Serve: Enjoy warm with extra honey butter or your favorite dip!
