- ½ cup chopped yellow or white onion
- 1 cup chicken broth
- 1½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup cooked black beans, rinsed and drained
- 1 cup frozen corn, thawed
- 16 ounces jarred salsa
- ½ teaspoon chili powder
- ½ teaspoon paprika
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 350°F.
- Spread the uncooked rice across the bottom of a 12-by-9-inch casserole dish.
- Add the minced garlic, chopped onion, and chicken broth. Stir only the rice mixture until evenly combined.
- Arrange the cubed chicken evenly over the rice.
- Scatter the black beans and thawed corn over the chicken.
- Spoon the salsa evenly over the casserole, keeping the rice covered.
- Sprinkle the chili powder and paprika over the top.
- Add the shredded cheddar cheese in an even layer.
- Cover the casserole dish tightly with foil and bake for 45 minutes.
- Remove the foil and bake uncovered for 10 minutes, or until the cheese melts and the chicken reaches 165°F.
- Let the casserole rest for 5 minutes before serving.
Notes
- Use uncooked long-grain white rice for the listed liquid amount and baking time.
- Keep the rice at the bottom of the dish and covered with liquid and toppings.
