Description

Crunchy on the outside, bursting with Southwest flavors on the inside—these Southwest Chicken Egg Rolls are your new go-to appetizer. Perfect for parties, dinner, or as a snack. Serve with creamy avocado ranch or zesty salsa for the ultimate treat.

  • 2 cups cooked and shredded chicken breast
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn (frozen, fresh, or canned)
  • 1 red bell pepper, diced
  • 3 green onions, chopped
  • 1 jalapeño, minced (optional for heat)
  • 1 cup fresh spinach, chopped
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1 cup shredded Pepper Jack or Monterey Jack cheese
  • 1012 egg roll wrappers
  • Oil for frying (or spray for baking/air frying)

Instructions

  • Prepare the filling:
    Combine shredded chicken, black beans, corn, red bell pepper, green onions, spinach, jalapeño (if using), and spices in a large bowl. Mix well. Fold in the shredded cheese until evenly distributed.
  • Assemble the egg rolls:
    Place an egg roll wrapper on a clean surface in a diamond shape. Spoon 2-3 tbsp of filling into the center. Fold the bottom corner over the filling, then fold in the sides. Roll tightly, sealing the top edge with water.
  • Choose your cooking method:
    • Frying: Heat oil in a skillet to 350°F (175°C). Fry rolls 3-4 minutes per side until golden brown. Drain on paper towels.
    • Baking: Preheat oven to 400°F (200°C). Arrange rolls on a baking sheet lined with parchment. Spray or brush lightly with oil. Bake for 15-20 minutes, flipping halfway through.
    • Air frying: Preheat air fryer to 375°F (190°C). Arrange rolls in the basket, not touching. Air fry for 8-10 minutes, turning halfway through.
  • Serve:
    Enjoy warm with dipping sauces like avocado ranch, sour cream, or salsa.

Notes

1️⃣ Seal Tightly: When assembling the egg rolls, ensure the edges are securely sealed with water. This prevents the filling from spilling out during cooking and ensures a neat, crispy result.

2️⃣ Don’t Overcrowd: Whether frying, baking, or air-frying, cook the egg rolls in batches. Overcrowding can lead to uneven cooking and prevent the rolls from becoming crispy.

3️⃣ Customize the Spice Level: Adjust the amount of jalapeños or spices to suit your heat preference. For a milder version, skip the jalapeños or use sweet peppers instead. For extra heat, add hot sauce or chili flakes to the filling.
