- 1 sheet of puff pastry
- 1 ½ cups fresh spinach (or 1 cup frozen spinach, thawed and drained)
- 1 cup crumbled feta cheese
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 egg (for egg wash)
- Salt and pepper to taste
- Optional: herbs like oregano, thyme, or parsley for extra flavor
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Heat olive oil in a skillet over medium heat, sauté garlic until fragrant, then add spinach and cook until wilted. Drain and squeeze out excess moisture.
- 3. In a bowl, combine cooked spinach and crumbled feta. Season with salt and pepper.
- Roll out the puff pastry on a flat surface. Spread the spinach-feta mixture evenly over the pastry, leaving a small border.
- Fold the pastry over the filling and press down gently.
- Slice the pastry into 1 to 1½ inch strips, twist each strip and place them on the prepared baking sheet.
- Brush with an egg wash and bake for 15-20 minutes, or until golden brown and puffed.
- Remove from the oven and let cool slightly before serving.
Notes
- For a vegan version, use vegan feta and replace the egg wash with olive oil or plant-based milk.
- You can freeze unbaked twists for later use — just bake directly from frozen when ready to serve.
