Description

Creamy Spinach Artichoke Baked Chicken is an easy 3-ingredient dinner made with chicken breasts, spinach artichoke dip, and shredded cheese. It takes 5 minutes to prep and bakes into a cheesy, family-friendly main dish.


Ingredients

  • 1 to 2 pounds boneless, skinless chicken breasts
  • 1 container spinach artichoke dip, 10 to 16 ounces, or another cream cheese-based dip
  • 1 heaping cup shredded cheddar, mozzarella, or a blend of both
  • Cooking spray, for greasing the baking dish
  • Optional garnish: diced fresh tomatoes, chopped parsley, or cracked black pepper

Instructions

  1. Preheat the oven to 375°F and grease a 9×13-inch baking dish with cooking spray.
  2. Pound the chicken breasts lightly to flatten them to an even thickness. Cut large pieces into smaller portions if needed.
  3. Place the chicken breasts in a single layer in the prepared baking dish.
  4. Spread a thick layer of spinach artichoke dip over the top of each piece of chicken.
  5. Sprinkle the shredded cheese evenly over the dip-covered chicken.
  6. Bake uncovered on the center oven rack for about 30 minutes, or until the chicken reaches 165°F in the thickest part.
  7. Let the chicken rest for 5 minutes before serving. Spoon extra sauce from the baking dish over each portion.

Notes

  1. The amount of dip needed depends on the amount of chicken. Use a 10 to 12-ounce container for about 1 pound of chicken and a 16-ounce container for 1 1/2 to 2 pounds.
  2. You can swap spinach artichoke dip for another cream cheese-based dip, such as jalapeño artichoke or creamy street corn.
  3. Serve with buttered noodles, rice, roasted potatoes, vegetables, garlic bread, salad, or your favorite family dinner sides.
  4. For best results, use an instant-read thermometer and cook the chicken to 165°F.
