- 4 ounces cream cheese, softened
- 1 large egg
- 1 tablespoon olive oil
- ½ teaspoon dried dill
- 2 cups fresh spinach, chopped and packed
- ¾ cup crumbled feta cheese
- 2 teaspoons bacon bits
- Salt and black pepper, to taste
- 1 sheet frozen puff pastry, thawed
- 1 tablespoon butter, melted
Instructions
- Spray a muffin pan with cooking spray.
- Soften cream cheese and mix with egg, olive oil, and dill.
- Combine spinach, feta, bacon, salt, and pepper, then mix with cream cheese.
- Cut puff pastry into 9 squares and press into muffin cups.
- Fill with spinach mixture, fold corners, and brush with butter.
- Bake at 400°F for 20 minutes until golden.
- Cool for 10 minutes, then remove and serve.
Notes
- Allow puffs to cool slightly before removing from the pan.
- Reheat leftovers in the oven for best texture.
