Description

Crispy Spinach Lentil Burgers made with wholesome lentils, fresh spinach, and warm spices for an easy vegetarian meal.


Ingredients

  • 1 cup cooked green or brown lentils
  • 2 cups fresh spinach, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons olive oil

Instructions

  1. Combine lentils, spinach, breadcrumbs, Parmesan if using, onion, garlic, cumin, paprika, salt, and pepper in a bowl.
  2. Add the egg and mix until the mixture holds together.
  3. Divide the mixture into four portions and shape into patties.
  4. Heat olive oil in a skillet over medium heat.
  5. Cook patties for 4–5 minutes per side until golden and heated through.

Notes

  1. Substitute gluten-free breadcrumbs or oats for a gluten-free option.
  2. Add chili powder or cayenne for heat.
  3. Shredded carrots add texture and mild sweetness.
