Description

Creamy Spinach Tomato Spaghetti made with sun-dried tomatoes, fresh spinach, and Parmesan cheese.


Ingredients

Scale
  • 12 oz spaghetti
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • Crushed red pepper flakes (optional)

Instructions

  1. Boil spaghetti in salted water until al dente and drain.
  2. Heat olive oil in a skillet and sauté garlic until fragrant.
  3. Add sun-dried tomatoes and spinach and cook until spinach wilts.
  4. Pour in heavy cream and simmer gently.
  5. Stir in Parmesan cheese until smooth.
  6. Toss spaghetti with the sauce and season to taste.
  7. Serve hot with extra Parmesan if desired.

Notes

  1. Use low heat when adding cream to prevent separation.
  2. Fresh spinach gives the best texture.
  3. Add cheese off the heat for a smooth sauce.
