Scones:

  • 312 g (2½ cups) all-purpose flour

  • 25 g (2 tbsp) granulated sugar

  • 2½ tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 113 g (1/2 cup) cold unsalted butter, cubed

  • 100 g (1 cup) fresh cranberries, chopped (some whole)

  • Zest of 1 orange (reserve 2 tsp for glaze)

  • 240 ml (1 cup) buttermilk

  • 1 large egg, lightly beaten

Glaze:

  • 120 g (1 cup) powdered sugar

  • 2 tbsp orange juice

  • 2 tsp reserved orange zest


Instructions

  • Preheat oven to 220°C (425°F). Line a baking sheet with parchment.

  • In a large bowl, whisk flour, sugar, baking powder, baking soda, salt, and orange zest.

  • Cut in cold butter until the mix resembles coarse crumbs.

  • Stir in buttermilk just until combined. Fold in cranberries.

  • Form dough into a ball, knead 6–8 times, and pat into a 25 cm (10-inch) circle.

  • Cut into 8 wedges and place on baking sheet.

  • Brush tops with beaten egg.

  • Bake for 13–16 minutes, or until golden. Cool slightly.

  • Mix powdered sugar, orange juice, and zest to make glaze. Drizzle over scones.

Notes

Use cold butter for flakiness.

Frozen cranberries work (don’t thaw).

Add orange extract to glaze for more flavor.

Reheat gently before serving to restore texture.

Dough can be made ahead and chilled overnight.
