Description

A moist and warmly spiced copycat Starbucks pumpkin pound cake made with pumpkin puree, brown sugar, cinnamon, cloves, and nutmeg. This easy homemade loaf requires no mixer and makes 12 slices.


Ingredients

  • 1 1/2 cups (180g) all-purpose flour, or gluten-free measure-for-measure flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 2/3 cup (132g) granulated sugar
  • 2/3 cup (142g) packed brown sugar
  • 1/4 cup (59ml) milk
  • 3 large egg whites
  • 1 cup (227g) canned pumpkin puree
  • Nonstick cooking spray for the loaf pan

Instructions

  1. Preheat the oven to 350°F. Thoroughly coat a standard loaf pan with nonstick cooking spray.
  2. Whisk the flour, baking soda, baking powder, salt, cinnamon, cloves, and nutmeg in a medium bowl.
  3. Combine the granulated sugar, brown sugar, milk, and egg whites in a large bowl.
  4. Add the pumpkin puree to the sugar mixture and stir until smooth.
  5. Gradually add the dry ingredients to the pumpkin mixture. Stir gently just until combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Place the pan on a wire rack and let the loaf cool completely in the pan before removing and slicing.

Notes

  1. Use pure canned pumpkin puree, not pumpkin pie filling.
  2. Measure the flour by weight or spoon it into the measuring cup and level the top.
  3. Do not overmix the batter after adding the flour.
  4. For standard muffins, bake at 425°F for 7 minutes. Reduce the oven to 350°F and bake for another 12 to 14 minutes.
  5. A gluten-free measure-for-measure flour blend can replace the all-purpose flour.
  6. Store the cooled loaf in an airtight container at room temperature for up to 3 days.
