Ingredients

  • 3 medium russet potatoes
  • 1 lb steak (ribeye, sirloin, or flank), cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & pepper to taste
  • ½ cup shredded cheddar cheese
  • ¼ cup crispy bacon bits
  • ¼ cup chopped green onions
  • ½ cup sour cream (optional)
  • 2 tbsp butter (optional)

Instructions

1️⃣ Prepare the Potatoes: Preheat the oven to 400°F (200°C). Wash and pierce the potatoes with a fork. Bake for 45-60 minutes until soft. For crispy skin, rub with oil and salt before baking.

2️⃣ Cook the Steak Bites: Heat olive oil in a pan over medium-high heat. Season steak with garlic powder, onion powder, salt, and pepper. Sear for 4-5 minutes, flipping until browned and cooked to your desired doneness. Let rest.

3️⃣ Assemble: Slice open the baked potatoes and fluff the inside with a fork. Add butter, then top with steak bites, cheese, bacon, and green onions. Finish with a dollop of sour cream.

4️⃣ Serve & Enjoy: Drizzle with any leftover steak juices for extra flavor!

Notes

Don’t Overcook the Steak – For juicy, tender bites, cook the steak on high heat for just a few minutes per side. Overcooking can make it tough and dry.

Crispy Potato Skin Tip – Rubbing the potatoes with oil and salt before baking gives them a crispy, flavorful skin. Don’t skip this step!
